The sweet mango in this Paleo Pork and Mango Stir Fry recipe adds natural balance to the spiciness of the fresh chillies.Use spicy or mild chilli pepper depending on your personal tastes.
Stir fry pork, onion, peppers, chillies and garlic in coconut oil.
Once softened, add the mango and a couple of tablespoons of water and cook for a few more minutes on a high heat.
Add water as required to prevent burning and give a stickiness to the stir fry.
Serve with rice noodles and coriander as desired.
Notes
We’ve suggested serving with rice noodles to keep the recipe gluten-free, though you could serve with shredded courgette if you’d like a 100% grain-free version.
