What is bone marrow?
Bone marrow is the soft, spongy filling found in the centre of bones.
This tissue produces red and white blood cells, platelets and plasma, which in turn are responsible for oxygen transportation, immune function, and blood clotting.
A Traditional Food
Though it has fallen out of favour in many modern cuisines, traditionally marrow bones have played an important role in the human diet because of its high nutritional value.
Whether incorporated into stews and soups, or scooped out and eaten directly from the bone, marrow was a prized nutritional resource across all continents.
There is even research that indicates that it was the nutrient dense marrow that our pre-human ancestors scavenged from the kills of other predators that helped us evolve our large brains!

- Add grass-fed stock bones to soups or stews
- Roast marrow bones and eat the centre directly with a spoon
- Roast the bones, scoop out the marrow and use it as a spread or garnish

How to Roast Marrow Bones
Roasting marrow bones in incredibly easy.
- Preheat oven to 180C
- Place cut bones upright on baking tray (to avoid leakage)
- Roast for 15-20 mins
Times and temperatures may vary depending upon your oven.
You’ll need a thin spoon (or similar tool) to scoop out the centre.
