Ingredients
  

  • 4 115g Lamb Loin RChop Organic, Grass-fed
  • 2 tbsp Olive Oil Extra Vigin
  • 3 cloves Garlic Fresh
  • 1 tbsp Fresh Rosemary Finely chopped
  • 1 tbsp Fresh Thyme Finely chopped
  • 1 tbsp Fresh Parsley Finely chopped
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • Zest of 1 lemon

Instructions
 

  • Preheat the Oven: Preheat your oven to 200°C (400°F).
  • Prepare the Herb Mixture: In a mixing bowl, combine the minced garlic, rosemary, thyme, parsley, sea salt, black pepper, and lemon zest.
  • Coat the Lamb Chops: Rub the lamb chops with olive oil and then coat them evenly with the herb mixture. Ensure that the chops are well-covered with the herbs for maximum flavor.
  • Sear the Lamb Chops: Heat a large skillet over medium-high heat. Sear the lamb chops for 2-3 minutes on each side until they are nicely browned.
  • Bake the Lamb Chops: Transfer the seared lamb chops to a baking dish and place them in the preheated oven. Bake for 10-12 minutes for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to check the internal temperature; it should read 60°C (140°F) for medium-rare.
  • Rest the Lamb Chops: Remove the lamb chops from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat, ensuring a tender and juicy bite.
